Crispy Vegan Air Fryer Zucchini And Corn Fritters

 This healthy air fryer zucchini chips recipe is easy to make and irresistible, thin, and crispy. They are perfect for low-carb, keto, paleo, and gluten-free dieters.

These delicious air fryer zucchini chips don’t have cheese, breadcrumbs, or flour. These are crunchy homemade chips and a healthier alternative to potato chips.

INGREDIENTS

  • 1 large zucchini, very thinly sliced (use a mandoline)
  • ½ Tablespoon olive oil

INSTRUCTIONS

AIR FRYER INSTRUCTIONS.

 

Preheat air fryer at 270º F for 2 minutes

Place the zucchini slices in one single layer between paper towels to help draw out the liquid.

Place the zucchini slices in a single layer in the air fryer basket.

Brush with olive oil. Sprinkle with salt or any seasoning you desire.

Air fry at 270F for 12 to 15 minutes or until golden brown and crispy.

Cool in a cooling rack and repeat with remaining zucchini coins.

OVEN INSTRUCTIONS


    1. Preheat the oven to 225º F. Line a baking sheet with parchment paper and set aside.
    2. Place the zucchini slices in one layer between paper towels to help draw out the liquid.
    3. Place zucchini slices in a single layer on the prepared baking sheet. Brush zucchini with olive oil, sprinkle with salt or any seasoning you desire, or even parmesan cheese.
    4. Bake for 2 hours, or until the zucchinis are golden brown and crispy (If some slices are still soft, place them back in the oven until they are golden brown and crispy).
      Cool in a cooling rack before serving.

NOTES

  • Use a mandoline to get perfectly sliced zucchini.
  • Placing the zucchini between paper towels will help them to crisp up in the air fryer.
  • Start checking around 12 minutes and remove those that are done and keep air frying those that aren’t crispy yet.
  • You can use cooking spray oil if you don’t have a silicone brush.
